Amish macaroni salad is a perfect side dish for summer get-togethers. Make up a big bowl for your next barbecue or block party, and wait for the compliments to roll in.
Ingredients
- 2 cups uncooked elbow macaroni
- 2 cups Miracle Whip or mayonnaise
- 3/4 cup sugar
- 3 tablespoons sweet pickle relish
- 3 tablespoons yellow mustard
- 2-1/4 teaspoons cider vinegar
- 3/4 teaspoon celery seed
- 1/4 teaspoon salt
- 3 celery ribs, chopped
- 1 medium onion, finely chopped
- 1 medium sweet red pepper, chopped
- 3 hard-boiled large eggs, chopped
Directions
- Cook macaroni according to package directions; drain and rinse with cold water. Cool completely.
- For dressing, in a small bowl, combine Miracle Whip, sugar, relish, mustard, vinegar, celery seed and salt. In a large bowl, combine macaroni, celery, onion, red pepper and eggs. Add dressing; gently toss to coat. Cover and refrigerate until serving.
