These sweet-yet-filling apple butter cookies are your sweet tooth's answer to a healthier cookie. Chock full of flavor (and nuts and raisins!), these cookies are divinely served warm with a glass of cold milk. The apple flavor makes them ideal for fall-themed desserts, but the apple is subtle and versatile enough to enjoy any time of year.
Ingredients
- 1/4 cup butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1/2 cup quick-cooking oats
- 1/2 cup apple butter
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons whole milk
- 1/2 cup chopped nuts
- 1/2 cup raisins
Directions
- In a small bowl, cream butter and sugar. Beat in egg, oats and apple butter. Combine dry ingredients; gradually add to creamed mixture along with the milk; beat until blended. Stir in nuts and raisins. Cover and refrigerate until easy to handle.
- Drop by teaspoonfuls onto lightly greased baking sheets. Bake at 350° for 15 minutes or until set. Remove to wire racks.
