Bacon Scones

Ingredients

  • 1-3/4 cups all-purpose flour
  • 2-1/4 teaspoons baking powder
  • 1 teaspoon ground mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 tablespoons cold butter
  • 2 eggs
  • 1/3 cup 2% milk
  • 1/2 cup chopped onion
  • 1/4 cup shredded cheddar cheese
  • 6 bacon strips, cooked and crumbled, divided

Directions

  1. Preheat oven to 400°. In a large bowl, combine first five ingredients. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk eggs and milk. Stir into dry ingredients just until moistened. Fold in onion, cheese and two-thirds of the bacon.
  2. Transfer dough to a greased baking sheet. Pat into a 7-1/2-in. circle. Cut into eight wedges, but do not separate. Sprinkle with remaining bacon. Bake 15-20 minutes or until golden brown. Serve warm.
