A Bakewell tart is an almond and jam-based pastry that's simple in looks but rich in flavor. Beginner bakers and professionals alike can delight in this easily adaptable dessert.
Ingredients
- Dough for single-crust pie
- 1/2 cup seedless raspberry jam
- 6 tablespoons butter, softened
- 1/2 cup sugar
- 2 large eggs, room temperature
- 1 cup finely ground almonds
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon almond extract
Directions
- Preheat oven to 400°. On a lightly floured surface, roll out dough to a 1/8-in.-thick circle. Transfer to a 9-in. fluted tart pan with removable bottom; trim even with rim. Spread jam over bottom of crust.
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Gradually beat in remaining ingredients. Spread over jam.
- Bake until filling is set, 25-30 minutes. Cool completely on a wire rack.
