A blend of just a few simple and sweet ingredients, the bee's knees is an elegant summer evening cocktail.
Ingredients
- 1/4 cup water
- 1/4 cup honey
- 2 ounces gin
- 3/4 ounce lemon juice
- 1 lemon peel strip
Directions
- In a small saucepan over medium-high heat, bring water and honey to a boil. Reduce heat; simmer, uncovered, until reduced to 1/4 cup. Transfer honey syrup to a resealable container. Cover and refrigerate until chilled.

Fill a shaker half full with ice. Add gin, lemon juice and 1/2 ounce honey syrup. Cover and shake until frost forms on the outside of the shaker, 15-20 seconds. Strain into coupe glass. Garnish with lemon peel. Cover and refrigerate remaining syrup for up to 2 weeks.
