A big spoonful of warm peach blueberry cobbler topped with vanilla ice cream is the perfect dessert for a summer evening.
Ingredients
- 2 tablespoons sugar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/2 cup water
- 1 tablespoon lemon juice
- 2 cups sliced peeled fresh peaches
- 1 cup blueberries
- TOPPING:
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup 2% milk
- 1/4 cup butter, softened
Directions
- Preheat oven to 375°. In a saucepan, combine the first 5 ingredients. Bring to a boil. Cook and stir until thickened, 1-2 minutes; stir in fruit. Pour into a 2-qt. baking dish.
- For topping, in a small bowl, combine flour, sugar, baking powder and salt. Stir in milk and butter. Spread over fruit mixture. Bake until topping is golden brown and filling is bubbly, 45-50 minutes. Serve warm.
