This date cookie recipe takes just 30 minutes of prep and bake time. It is the perfect sweet treat to bring to a gathering. Each cookie is only 77 calories!
Ingredients
- 1/3 cup butter, softened
- 2/3 cup packed brown sugar
- 1 large egg
- 3/4 cup all-purpose flour
- 2/3 cup whole wheat flour
- 2 teaspoons grated lemon zest
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup fat-free milk
- 1 cup chopped dates
Directions
- In a bowl, cream butter and brown sugar. Add egg; mix well. Combine the flours, lemon zest, baking powder, cinnamon, nutmeg and salt; add to creamed mixture alternately with milk, beating well after each addition. Stir in dates.
- Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 325° for 13-15 minutes or until golden brown. Remove to wire racks to cool. Store in an airtight container.
