Corn casserole with cream cheese is a decadent side dish of sweet corn in a tangy, green chile-infused cream sauce. It's a short-and-sweet recipe that makes just enough for a couple of servings, so it won't wear out its welcome.

Ingredients

  • 1-3/4 cups frozen corn
  • 4 ounces cream cheese, cubed
  • 2 tablespoons butter, cubed
  • 2 tablespoons canned chopped green chiles
  • 1 small garlic clove, minced
  • 1/8 teaspoon salt
  • Dash pepper

Directions

  1. In a large bowl, combine all the ingredients. Place in a greased 3-cup baking dish.
  2. Bake, uncovered, at 350° for 25-30 minutes or until bubbly around the edges. Stir before serving.
