Our creamy pesto chicken recipe uses heavy whipping cream to make a rich and savory pesto sauce you'll want to slurp up.
Ingredients
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 2 cups grape tomatoes, halved
- 3/4 cup heavy whipping cream
- 1/2 cup prepared pesto
- 1/2 cup shredded Parmesan cheese
Directions
- Pound chicken breasts with a meat mallet to 1/2-inch thickness; sprinkle with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown chicken on both sides; remove and keep warm.
- In the same skillet, add garlic. Cook and stir until fragrant, about 1 minute. Stir in tomatoes, cream and pesto. Bring to a boil; reduce heat. Return chicken to pan; cover and cook until a thermometer reads 165°. Top with Parmesan; serve immediately.
