Need dinner on the table in a hurry? This grilled salmon salad is the healthy and delicious (not to mention quick) meal you're looking for.
Ingredients
- 4 salmon fillets (4 ounces each)
- 2 garlic cloves, minced
- 1/2 cup teriyaki sauce
- 1 package (10 ounces) hearts of romaine salad mix
- 1 medium cucumber, sliced
- 1 pint cherry or grape tomatoes, halved
- 1/2 medium red onion, thinly sliced
- Salad dressing of your choice
- Optional: Crumbled feta cheese, fresh dill and lemon slices
Directions
- Rub salmon with garlic; place in a shallow bowl. Add teriyaki sauce; turn salmon to coat. Let stand 10 minutes.
- Place salmon on an oiled grill rack. Grill salmon, covered, over medium-high heat or broil 3-4 in. from heat until fish just begins to flake easily with a fork, 4-5 min on each side.
- Toss salad mix, cucumber, tomatoes and onion with salad dressing; place on 4 salad plates. Top with salmon and desired toppings.
