Gluten-Free Waffles

With a crisp exterior and light, tender interior, our gluten-free waffles taste just like the traditional ones. Make a batch for weekend brunch, or freeze them for a quick toaster breakfast during the week.

Ingredients

  • 2 cups gluten-free baking flour (with xanthan gum)
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup 2% milk
  • 5 tablespoons canola oil
  • 2 teaspoons vanilla extract
  • Butter and maple syrup, for serving

Directions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. In a small bowl, whisk eggs, milk, oil and vanilla extract until blended. Whisk wet ingredients and dry ingredients together until just moistened. Let sit 5-10 minutes.
  2. Preheat waffle maker; grease with cooking spray. Bake waffles according to manufacturer’s directions until golden brown. Serve with butter and maple syrup as desired.
