Enjoy a burst of flavors with this easy avocado chicken salad, made with rotisserie chicken, avocado and fresh vegetables. It's perfect for sandwiches, wraps or on its own!
Ingredients
- 1 rotisserie chicken, skin removed, cubed
- 2 medium ripe avocados, peeled and mashed
- 3/4 cup pomegranate seeds
- 6 green onions, chopped
- 8 cherry tomatoes, halved
- 1 jalapeno pepper, seeded and minced
- 1/4 cup fresh cilantro leaves, chopped
- 3 tablespoons mayonnaise
- 2 tablespoons lime juice
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon pepper
- 20 slices multigrain bread, toasted
Directions
- In a large bowl, combine all ingredients but the bread. Spread chicken salad over 10 bread slices; top each prepared slice with remaining bread.
