Hamburger Rice Casserole

A mash-up of rice with gravy and a cheeseburger, hamburger rice casserole is a delicious and satisfying meal that’s perfect for busy weeknights or casual gatherings with friends.

Ingredients

  • 1 tablespoon butter
  • 1 pound ground beef
  • 1/2 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups uncooked instant rice
  • 1-1/2 cups reduced-sodium beef broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (10-1/2 ounces) condensed cream of mushroom soup, undiluted
  • 2 teaspoons Worcestershire sauce
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup chopped dill pickle
  • 1 tablespoon prepared mustard

Directions

  1. In a medium Dutch oven or nonstick skillet, melt butter over medium heat. Add ground beef and onion; cook until beef is browned and onions are tender, 5-6 minutes. Add garlic, oregano, salt and pepper; cook one minute longer. Stir in rice, broth, crushed tomatoes with juice, cream of mushroom soup and Worcestershire.
  2. Cover; cook over low heat until rice is cooked, 15-20 minutes, stirring frequently. Stir in 1/2 cup cheddar, pickles and mustard. Top with remaining 1/2 cup shredded cheese. Cover; let cheese melt 5 minutes. Serve immediately.
