Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Dash ground nutmeg
  • 1 cup heavy whipping cream
  • 1 cup whole milk
  • 1/2 cup plus 1 tablespoon grated Pecorino Romano cheese, divided
  • 4 slices Texas toast, crust removed
  • 2 small tomatoes, halved
  • 14 ounces thickly sliced cooked turkey breast
  • 4 cooked bacon strips
  • Chopped fresh parsley
  • Paprika

Directions

  1. Preheat oven to 350°. In a small saucepan, melt butter over medium heat. Whisk in flour, salt, pepper and nutmeg until smooth. Gradually whisk in cream and milk. Bring to a boil; cook and stir until thickened, 1-2 minutes. Reduce heat to low. Add 1/2 cup cheese; stir until melted. Keep warm.
  2. In each of 2 small cast-iron or other ovenproof skillets, place one slice of toast in the center of the skillet. Cut remaining 2 slices toast in half diagonally and arrange one triangle on either side of the toast in the center of the pans. Arrange turkey over toast and add 2 tomato halves, cut sides up to skillet. Pour sauce over turkey, toast and tomatoes in both skillets.
  3. Bake until lightly browned and bubbly, 10-15 minutes. Top with bacon, remaining 1 tablespoon cheese, parsley and paprika. Serve immediately.
