- 2-1/2 cups maple syrup
- 3/4 cup heavy whipping cream
- 1/4 cup butter
Directions
- Line a 8x4-in. loaf pan with parchment paper.
- In a Dutch oven, bring maple syrup to a boil over medium heat; simmer for 5 minutes. Pour in cream; without stirring, bring mixture back to a simmer. Let cook until temperature reaches 235°, about 12-13 minutes. Remove from heat; add butter; without stirring, let sit 5 minutes. Use a hand mixer to beat mixture at medium speed until mixture is thick and light in color, about 5 minutes. Immediately transfer to loaf pan. Cover; refrigerate until fudge is set, about 2 hours.
- Use edges of parchment paper to transfer fudge to a cutting board. Cut into 1-in. squares.
