Crazy Cake

I have made this dessert—otherwise known as crazy cake—for more than 50 years. It is classic, tender and moist, and requires only three easy steps. —Devota Angell, Allenstown, New Hampshire

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 tablespoons plus 1 teaspoon canola oil
  • 1-1/2 teaspoons white vinegar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 4-1/2 teaspoons baking cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Confectioners' sugar, optional

Directions

  1. Preheat oven to 350°. Grease a 8-1/2x4-1/2-in. loaf pan. In a small bowl, beat the sugar, water, oil, vinegar and vanilla until well blended. Combine flour, cocoa, baking soda and salt; gradually beat into sugar mixture until blended.
  2. Pour into prepared pan. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes.
  3. Cool 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.
