Oatmeal Caramel Apple Cookies

Homemade caramel apple cookies are a fall favorite. They combine the rich flavors of caramel, brown sugar, oats and fresh apples. Easy to make and perfect for the season, these cookies offer a delightful taste of autumn with every bite.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup sugar
  • 1 package (3.4 ounces) instant caramel or butterscotch pudding mix
  • 2 large eggs, room temperature
  • 1/2 cup unsweetened applesauce
  • 1-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3-1/2 cups old-fashioned oats
  • 1 medium apple, peeled and chopped

Directions

  1. Preheat oven to 350°. In a large bowl, cream butter, sugars and pudding mix until light and fluffy, 5-7 minutes. Add eggs; mix well. Beat in applesauce. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in oats and apple.
  2. Drop dough by tablespoonfuls 2 in. apart onto parchment lined baking sheets. Bake until golden brown, 15-18 minutes. Cool on pans 3 minutes. Serve warm or remove to wire racks to cool completely. Store in an airtight container.
