Oven-Roasted Chicken Breast

Ingredients

  • 2 cups water
  • 2 tablespoons plus 1/2 teaspoon salt, divided
  • 4 boneless skinless chicken breast halves (about 4 ounces each)
  • 2 teaspoons olive oil
  • 2 teaspoons pepper

Directions

  1. In a large bowl, whisk together water and 2 tablespoons salt until salt is dissolved. Add chicken; let brine 20-30 minutes. Drain chicken; discard brine. Pat chicken dry with paper towels.
  2. Preheat oven to 425°. Place chicken in a greased 13x9-in. dish or sheet pan. Brush with olive oil and season with remaining 1/2 teaspoon salt and pepper. Bake 15-20 minutes or until internal temperature reaches 165°. Transfer chicken to a cutting board; let rest 5 minutes. Slice or chop as desired.
