Ingredients
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1/2 cup white wine
- Aromatic ingredients: 6 whole peppercorns, 3 thyme sprigs, 1 rosemary sprig, 1 smashed garlic clove and 1 bay leaf
- 1 teaspoon salt
Directions
- In a skillet or saucepan just large enough to hold chicken in 1 layer, combine chicken, wine, aromatics and salt; add cold water to cover by 1 in. Bring to a boil. Reduce heat to low; simmer, covered, until a thermometer reads 170°, 15-20 minutes. Serve warm, or cool completely before refrigerating.
