  • Onion: Feel free to use sweet onion, as suggested in this recipe, or any onion you like—whichever you choose, it will add a layer of flavor that’s both savory and sweet.
  • Carrots: Many root vegetables are starchy and sweet, and carrots are no exception. Feel free to substitute them with parsnips or rutabaga if you like.
  • Olive oil: Because this sheet-pan kielbasa and veggies recipe is so simple, we recommend choosing a high-quality olive oil. Not only will it have a more complex flavor, it tends to be healthier too.

  • Dijon mustard (optional): You can serve this sheet-pan dinner with a simple side of Dijon mustard or with a honey mustard dressing.

Step 1: Cook the root vegetables

Preheat the oven to 400°. Divide the prepped sweet potatoes, onion and carrots between two greased 15x10x1-inch baking pans. Drizzle the vegetables with the oil, and toss everything to coat. Roast them for 25 minutes, periodically tossing the vegetables so all sides cook evenly.

Step 2: Add the kielbasa and remaining veggies

Add the kielbasa, squash and zucchini to the pans, and sprinkle everything with the salt and pepper. Roast until the vegetables are tender, 15 to 20 minutes. Transfer to a serving bowl, and toss to combine. Serve with Dijon mustard, if desired.

  • Switch up the sausage: There are tons of varieties of sausage that would blend beautifully with this recipe. You can use Italian, bratwurst or andouille sausage.

  • 1 large sweet onion, cut into 1-inch pieces
  • 4 medium carrots, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 pound smoked kielbasa or Polish sausage, halved lengthwise and cut into 1-inch pieces
  • 1 medium yellow summer squash, cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Dijon mustard, optional

Directions
