Shrimp Spaghetti

Shrimp spaghetti turns ordinary pasta into a light and colorful one-dish meal with peppers, onions and garlic.

Ingredients

  • 1 pound uncooked spaghetti or linguine
  • 1/4 cup olive oil
  • 1 cup chopped sweet red pepper
  • 1 cup chopped green pepper
  • 1/3 cup chopped onion
  • 3 garlic cloves, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon crushed red pepper flakes
  • 1/8 teaspoon pepper
  • 2 pounds peeled and deveined cooked shrimp (41-50 per pound)
  • 1/2 cup grated Parmesan cheese

Directions

  1. Cook pasta according to package directions. Drain, set aside.
  2. In a Dutch oven, heat oil over medium heat. Add peppers and onion; cook until tender, 4-5 minutes. Add garlic, salt, oregano, red pepper flakes and pepper; cook one minute longer. Add shrimp; cook until shrimp turn pink, 4-5 minutes. Add cooked pasta, toss to coat. Sprinkle with Parmesan before serving.
