
Smashed Sweet Potatoes

Savory and crispy, these smashed sweet potatoes will enliven any meal.
Ingredients
- 4 medium sweet potatoes, cut into 1-in. thick rounds
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter, melted
- 4 garlic cloves, minced
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons minced fresh parsley
Directions
- Preheat oven to 450°. Place sweet potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain.
- Drizzle oil over baking sheet; arrange cooked potatoes over oil. Using the flat bottom of a measuring cup, flatten sweet potatoes to 1/2-in. thickness. In a small bowl, combine Parmesan, butter, garlic, salt and pepper; spread over sweet potatoes.
- Roast until deeply golden brown, 25-30 minutes. Sprinkle with parsley.
