Stuffed French Toast

Stuffed French toast is the ultimate brunch showstopper. With a vanilla cream cheese filling, this toast is dipped in a cinnamon custard and then toasted to perfection—you may just set a new standard among your family and friends.

Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 1 loaf (1 pound) challah or egg bread, cut into 12 slices
  • 1-1/2 cups 2% milk
  • 4 large eggs
  • 2 teaspoons sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 tablespoons butter
  • Optional toppings: Butter, maple syrup, strawberries, whipped cream

Directions

  1. In a small bowl, beat cream cheese, confectioners' sugar and vanilla until smooth. Spread over 6 slices bread to within 1/2 in. of edges. Top with remaining bread. In a shallow bowl, whisk milk, eggs, sugar, cinnamon and salt.
  2. In a large skillet, heat 2 tablespoons butter over medium heat. Dip both sides of sandwiches in egg mixture, allowing each side to soak. Place 3 sandwiches in skillet; toast 4-5 minutes on each side or until golden brown. Repeat with remaining butter and sandwiches. Serve with toppings as desired.
