Creamed spinach is an underrated side dish, and this recipe with garlic chive cream cheese, mozzarella and Parmesan has a luxurious texture and couldn't be easier to make.
Ingredients
- 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
- 1-1/2 cups spreadable chive and onion cream cheese
- 1 cup grated Parmesan cheese
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup butter, cubed
- 1/4 teaspoon pepper
Directions
- In a large saucepan, combine all ingredients. Cook and stir over medium heat for 8-10 minutes or until blended and heated through.
