Turkey Feta Meatballs

These turkey meatballs are healthy, packed with flavor — and fiber! They're also incredibly moist. A combination of fresh and dried herbs gives these meatballs a Mediterranean flair.

Ingredients

  • 1 teaspoon olive oil
  • 1 cup chopped fresh spinach
  • 1 garlic clove, minced
  • 1 pound ground turkey
  • 1/3 cup whole wheat panko bread crumbs
  • 1 large egg, beaten
  • 1 tablespoon minced fresh parsley
  • 1-1/4 teaspoons salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 3/4 cup crumbled feta cheese

Directions

  1. Preheat oven to 350°. Fit a 15x10x1-in. baking sheet with a wire rack; coat with cooking spray.
  2. Heat oil in a small skillet over medium-low heat. Add spinach and garlic; cook until spinach has wilted, 1-2 minutes.
  3. In a large bowl, combine spinach mixture, ground turkey, feta, bread crumbs, egg, parsley, salt, basil and pepper. Shape into 1-1/2 in. balls. Line on prepared wire rack, spacing 1-in. apart. Bake 25-30 minutes or until internal temperature reaches 165°.
